Ingredients:
* 1 / 2 kg. tuna on a piece
* 100 g. fresh bacon
* 6 cloves garlic
* 1 / 2 liter of dry white wine
* 1 / 2 kg. lard
* 8 black peppercorns
* Salt
Wash the tuna, remove the skin and let drain in cold water half an hour.
Peel the garlic cloves, cut the bacon into cubes, crushed in a mortar the peppercorns and garlic.
