Lamb with port

Ingredients for 4 people:

350gr. Arborio rice 

1 leek
4 slices of smoked bacon
80ml.de pomegranate juice
600ml. vegetable stock
50g. butter
50g. Parmesan cheese and pomegranate seeds for garnish.

Preparation:

We start by heating the vegetable broth, while squeeze the grenade as if it were an orange to get the amount needed and we strain. Reserve some seeds for garnish. Cut the leek in Brunoise (diced small) and we cut the bacon into pieces and reserve larger.
To make a good risotto is important to consider the kind of dish where you will make the ideal container bottom must be very thick and not very deep and wide enough to remove with ease and allow the rice to swell. We heat the pan, when hot add half the butter and put to fry the leeks over low heat until softened a bit and add the bacon, we let it brown a bit and add the rice, let it burn until the grains are transparent (about 2 minutes) and add a ladle of soup we had heating.
